Pizza Paratha


Recipe Serves : 4 – 5


Ingredients :

  • Wheat Flour – 2 Cups
  • Salt to Taste
  • Water
  • Pizza Sauce – 4 – 5 tbsp
  • Capsicum – 1/2 cup, Chopped
  • Onion – 1 medium, Chopped
  • Corn – 1/2 cup
  • Mozzarella cheese – 1 Cup
  • Oil

Method :

  • Mix wheat flour & salt, add water and knead into dough.
  • Make 5 – 6 equal size round balls.
  • Roll into chapati.
  • Apply pizza sauce.
  • Add capsicum, onions, corn and mozzarella cheese.
  • Heat a pan and apply oil.
  • Fry paratha on low to medium heat.

Serve hot with ketchup.

Sabudana Vada

Recipe Serves : 4 – 5

Ingredients :

  • Sabudana/Sago – 100 gms
  • Potatoes – 4 Medium sized, Boiled, Mashed
  • Peanuts – 3 tbsp, Coarsely Ground
  • Cumin Seeds – 1/2 tsp
  • Green Chillies – 3, Chopped
  • Salt to taste
  • Oil – 1 tbsp

Method :

  • Soak sabudana for 3 to 4 hours.
  • Heat oil in a pan.
  • Add cumin seeds and let crackle.
  • Then add green chillies & fry.
  • Add peanuts and fry till golden brown.
  • Add boiled potatoes and sabudana.
  • Mix well.
  • Remove in a bowl and cool completely.
  • Add salt and mix properly.
  • Make patties.
  • Deep fry in medium hot oil one by one till golden brown.
  • Serve with sweet yoghurt.

Note : If the batter is wet then add cornflour and mix. Then fry one by one.

Khaman Dhokla


Ingredients :

Dhokla

  • Besan/Gramflour – 1 cup
  • Suji/Rava – 1 tbsp
  • Turmeric Powder – 1/2 tsp
  • Ginger Chilli Paste – 1 tsp
  • Curd – 2 tbsp
  • Oil – 2 tbsp
  • Lemon Juice – 5 tsp
  • Baking Soda – 1/2 tsp
  • Baking Powder – 1 tsp
  • Salt To Taste

Tempering

  • Oil – 1 tbsp
  • Mustard Seeds – 1 tsp
  • Sugar – 1 tsp
  • Water
  • Coriander Leaves
  • Grated Coconut

Method :

Dhokla

  • In a bowl, add besan, suji, ginger chilli paste and salt. Mix.
  • Then add curd & oil. Mix well and add water as required.
  • Make a lump free batter.
  • Add baking powder, baking soda, lemon juice.
  • Mix well.
  • It should be a dosa batter consistency.
  • Grease mould and pour the batter.
  • Steam for 15-20 minutes.

Tempering

  • In a pan, heat oil.
  • Add mustard seeds, let it crackle.
  • Add sugar & water.
  • Cook sugar dissolves.

Assembly

  • Pour the tempering over the dhokla.
  • Garnish with coriander leaves and grated coconut.
  • Cut into cubes.

Serve with green chutney.

Dahi Vada


It is my first blog post and I am so excited to share all the secrets of my cooking. I am a home cook inspired by my mother.

Today I am going to share one of my mother’s recipe. It is Dahi Vada. It is the most easy and delicious recipe you can ever find.

So let’s begin.

I have divided the recipe into 3 parts :

Making the vada’s , Yoghurt Dressing and Dahi vada assembly to make it easy.


Recipe Serves : 6


Ingredients :


For Vada

  • Urad Dal – 1 cup
  • Cumin seeds – 1 teaspoon
  • Whole Red Chillies -5
  • Baking Soda – 1/4 teaspoon
  • Salt
  • Water for grinding
  • Oil for frying
  • Cold water for soaking vada’s

For Yoghurt Dressing

  • Thick Yoghurt
  • Sugar
  • Cumin powder
  • Red chilli powder
  • Chaat masala powder

Method :

Making the vada

  • Soak urad dal for minimum 3 to 4 hours.
  • Grind urad dal, cumin seeds, whole red chillies,baking soda,salt into a smooth paste by adding minimum amount of water.
  • The batter should be of medium consistency not to thin not to thick.
  • Heat oil and drop small portion of batter into the oil.
  • Fry on medium to high heat till golden brown.
  • Remove from the oil and dump the vada’s into cold water for few seconds.
  • Squeeze the water from the vada’s and keep aside.

Yoghurt Dressing

  • Whisk yoghurt and sugar till sugar dissolves properly.

Dahi vada assembly

  • In a serving dish place the fried vada’s.
  • Pour yoghurt dressing on the top.
  • Sprinkle chaat masala, red chilli powder and cumin powder on the top.

Khatte Chole


Ingredients :

  • Chickpeas – 400 gms
  • Baking soda – 1/4 tsp
  • Whole Garam Masala – 2 Cloves, 5 Black Pepper, Cinnamon 1 inch, Black Cardamom 1
  • Cumin Seeds 1/2 tsp
  • Green Chilli Paste – 1/2 tbsp
  • Ginger Garlic Paste – 1 tsp
  • Tomato – 1 big, chopped
  • Turmeric Powder – 1/2 tsp
  • Coriander Powder – 1 tsp
  • Dry Mango Powder – 1/2 tsp
  • Cumin Seeds Powder – 1/2 tsp
  • Garam Masala Powder – 1/4 tsp
  • Green Chillies – 2 ,chopped
  • Half Lemon Juice
  • Salt
  • Oil

Method :

  • In a pressure cooker add chickpeas, whole garam masala, baking soda, salt and water. Pressure cook till chickpeas are well cooked.
  • Heat oil in a wok.
  • Add cumin seeds and let it crackle.
  • Add ginger garlic paste and green chilli paste, saute for 1 minute.
  • Then add turmeric powder, coriander powder, dry mango powder, cumin seeds powder, garam masala powder. Saute for few seconds.
  • Add chopped tomato,salt, cook till tomatoes are well cooked & oil separates from the masala.
  • Add green chillies and cooked chickepeas into the masala, mix well
  • Squeeze half lemon juice.
  • Cook on low flame for 2 mins.

Serve with bhature/paratha.

Vada Shots

 


This recipe is a very easy recipe of tasty and crispy vada’s.


Recipe Serves : 6


Ingredients :

  • Urad Dal – 1 cup
  • Cumin seeds – 1/2 teaspoon
  • Whole Red Chillies – 5
  • Baking Soda – 1/4 teaspoon
  • Salt
  • Water for grinding
  • Oil for frying

Method :

  • Grind urad dal, cumin seeds, whole red chillies,baking soda,salt into a smooth paste by adding minimum amount of water.
  • The batter should be of medium consistency not to thin not to thick.
  • Fry on medium to high heat till golden brown.

Serve hot with freshly pounded Coriander Green Chilli Chutney.


 

Chip Wrap

This is my husband’s recipe. He makes it on weekends.


Recipe Makes : 3 Sandwiches


Ingredients :

  • French Fries – Fries of 2 Large potatoes
  • Onion – 1 medium size, chopped finely
  • Capsicum – 1 small size, cut into juliennes
  • Green chillies – 3 chopped
  • Olives – 6
  • Cheese – 3 slices
  • Large Arabic Bread – 3
  • Butter – 3 tsp
  • Salt to taste

Method :

  • On a large arabic bread, on the center put french fries, onion, capsium, green chillies, olives,salt and cheese.
  • Close like a wrap.
  • Apply butter on the top.
  • Then place in a grill toaster and grill till crispy.

Serve hot with ketchup or mayonnaise.
